1 boneless chicken breast = £0.88
3 to 5 mushrooms = £0.40 Special ingredient:
½ tbsp. xanthan gum (a thickening agent) = £0.10
Brown rice = £0.50
Frozen sliced green beans = £0.30 Staple ingredients:
2 tbsp. extra-virgin olive oil
Salt and pepper
60ml chicken stock
If necessary, defrost the chicken a few hours beforehand. Clean off the mushrooms with a wet paper towel. Cut chicken and mushrooms into medium slice
Put a frying pan on medium-high heat and add olive oil to the pan. Season the chicken with a dash of onion powder, garlic powder, salt and pepper. Once the oil is heated, add the chicken to the pan and sauté for about five minutes.
Add mushrooms and xanthan gum to the pan and sauté for two more minutes. Pour in chicken stock and a bit of lemon juice. Let ingredients simmer together until the glaze thickens, about five minutes.
Try the sauce and add more spices and lemon juice if desired. Cook rice and green beans and serve with glazed chicken.
(By the way, you can cut this meal in half to make it stretch even further, doubling your servings and your savings.)
